What to send in a care package to a niece who’s away at college? Well, homemade cookies and candy, of course! But to personalize it a bit, I found some favorite photos of her, printed them at 2-1/2″ x 3-1/2″ and matted some with Denim Blues paper to fill the pages of a Mini Album. I tucked in a little note of encouragement and a few gift cards. Finally, I accented the pages with Denim Blues Embellishments.
Easy Buttercrunch Popcorn
- 1/2 cup unpopped popcorn
- 1 cup light brown sugar
- 1/2 cup light corn syrup
- 1/2 cup butter or margarine
- 1/4 cup butterscotch chips
- 1 teaspoon vanilla
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups nuts, toasted
Heat oven to 250. Grease a jelly roll pan. Pop popcorn to make about 14 cups. Meanwhile, in a large saucepan, bring brown sugar, corn syrup and butter to a boil, stirring until sugar is dissolved and butter melts. Reduce heat and cook 5 minutes, stirring occasionally. Remove from heat; stir in butterscotch chips, vanilla, baking soda and salt until blended and smooth. Working quickly and using two wooden spoons, stir popcorn and nuts into syrup to coat thoroughly. Pour mixture into prepared pan; bake 45 minutes, stirring occasionally. Remove from oven. Turn mixture out of pan onto foil to cool. Break popcorn into smaller pieces; store in airtight containers. Makes about 4 quarts.
